I’m not a vegetarian or vegan (yet) to avoid confusion. I have a mast cell problem, so it’s not that easy for me to do something like that, but to make some steps in the right direction I try some vega & vegan recipes once in a while. That way I found out about the best vegan burger ever!
I dislike clickbait links and my title sounds like that, but I really mean if I say this is the best vegan burger recipe ever. I tried a lot of vegan burger recipes, even that one of Jamie Oliver (which was pretty delicious), but this recipe is just the best. I did need to change some things about the recipe to make sure it doesn’t break that easily and that the taste is better, but since a while this is a recipe I often make. In the original recipe they make 4 medium burgers, I always prefer to make 6 small burgers. Besides that I also put mostly some of the burgers in the freezer, that works great!
Ingredients:
▲ 200 gram Chickpeas△ 70 gram Corn
▲ 2 Spring Onions
△ 1/2 Bell Pepper
▲ 1/2 teaspoon Cumin Powder
△ 1 teaspoon Curry Powder or Curcuma
▲ Breadcrumbs
△ 4 tablespoons Olive Oil
▲ Pepper
△ Salt
Step 1
Drain the chickpeas and corn, weigh it and put it in a blender or food processor. I always choose for the food processor, but I know of a friend who I gave the recipe that she used a blender for this and that also worked! Mash the chickpeas and corn as good as possible, but make sure it’s not too fine.Step 2
Mix the cumin, curry powder or curcuma, salt and pepper in the chickpeas and corn mixture (salt and pepper to taste). After that mix 4 tablespoons breadcrumbs in it. I still use the food processor with this step!Step 3
Cut the spring onions and bell pepper in very small pieces, so small as possible and mix 3/4 part of the vegetables in the food processor through the mixture, but after that mix the remaining vegetables through it with the hand, so it wouldn’t be cut in tiny little pieces in the food processor. This gives a little extra taste.Step 4
Make with the mixture 6 small burgers, because if you make them bigger and you squeeze once in the bun most of it falls off your bun and when they are smaller it doesn’t happen that much.Step 5
Add some breadcrumbs on a plate and make sure that on both sides of the burger there is enough breadcrumbs on it.Step 6
It’s time to bake them! Heat the olive oil in a frying pan and bake the burgers 4 minutes (each side 2 minutes) on medium heat. I’m doing it now more intuitively, but this is the best guideline to follow, what they also wrote in the recipe.I always love the burger on a bun with some slices tomato, cucumber and some lettuce, but that’s of course personal!
